For an extra layer of flavor, try adding a pinch of red pepper flakes to the dashi mixture.
If you don't have pre-made Tonkatsu, you can easily make your own by breading pork cutlets with panko breadcrumbs and frying them until golden brown.
Adjust the sweetness of the sauce to your liking by adding more or less sugar.
Feel free to substitute chicken or beef for the pork.
