Reduce the heat to medium-low. Pour the beaten eggs into the skillet. Cook and scramble, gently folding the eggs with the beef and spinach mixture, until the eggs are cooked to your desired consistency (approximately 4-6 minutes).

For a richer flavor, try using grass-fed ground beef.
Fresh spinach can be substituted for frozen; use approximately 1 pound of fresh spinach, washed and roughly chopped.
A pinch of red pepper flakes can add a subtle kick.
Serve immediately with a side of toast or a sprinkle of grated Parmesan cheese.
