Pour in the egg mixture, swirling to coat the bottom of the skillet evenly. Cook until the edges are mostly set, about 1-2 minutes. As the center begins to rise, gently lift the edges of the omelet with a spatula and tilt the skillet, allowing the uncooked egg to flow underneath and cook. Continue until the omelet is set but still slightly moist, about 2-3 minutes.

Assemble the Dish: Place the rice and ham mixture on top of one half of the omelet. Using a spatula, carefully fold the other half of the omelet over the rice filling, creating a cocoon shape.

Day-old rice works best for fried rice as it is drier and less likely to clump together.
