In a large mixing bowl, combine the soaked and drained cracked wheat, ground beef, finely chopped onion, lemon juice, ground cinnamon, salt, and black pepper. Mix thoroughly until all ingredients are well incorporated.

For a richer flavor, toast the pine nuts in a dry skillet over medium heat until lightly golden before adding them to the Kibby.
Adjust the amount of cinnamon to your preference. Some like a stronger cinnamon flavor, while others prefer a more subtle hint.
