For a richer flavor, consider using smoked sausage or adding a splash of red wine vinegar during the last 30 minutes of simmering. If you prefer a thicker soup, you can mash some of the lentils against the side of the pot after simmering. This soup is even better the next day, as the flavors have more time to meld together.
