Follow The Directions

01

Step
5 mins

In a large pot or Dutch oven, heat olive oil over medium heat. Add diced onion and minced garlic; sauté until softened and translucent, about 5 minutes.

02

Step
4 mins

Add sliced bell pepper and diced carrot. Cook, stirring occasionally, until slightly softened, about 4-5 minutes.

03

Step
2 mins

Add sliced mushrooms and continue to cook, stirring occasionally, until mushrooms have released their moisture and are lightly browned, about 2 minutes.

04

Step
1 mins

Pour in red wine and bring to a simmer. Cook, stirring occasionally, until wine has reduced slightly, about 1 minute.

05

Step
10 mins

Stir in diced tomatoes and vegetable broth. Bring the sauce to a boil, then reduce heat to low, cover, and simmer for 10-15 minutes, allowing the flavors to meld.

06

Step
5 mins

Stir in drained lentils, smoked paprika, dried basil, dried oregano, dried Italian herbs, and nutmeg. Season with salt and pepper to taste. Cook for another 5 minutes, or until lentils are heated through and the sauce has thickened slightly.

For a deeper flavor, consider using fire-roasted diced tomatoes.
If you don't have red wine, you can substitute with an equal amount of balsamic vinegar or additional vegetable broth.
To add a touch of sweetness, stir in a teaspoon of brown sugar or maple syrup along with the herbs and spices.
Serve hot over your favorite pasta (such as spaghetti, penne, or rigatoni). Garnish with fresh parsley and grated Parmesan cheese, if desired.
