For an extra layer of flavor, consider adding a splash of dry white wine to the vegetables while they are sautéing. If you don't have mafalda pasta, any short, ridged pasta shape will work well. Fresh herbs are always best, but if you only have dried thyme, use about 1 teaspoon. Adjust the amount of red pepper flakes to your liking, or omit them altogether if you prefer a milder flavor. For a richer, more decadent casserole, use full-fat cheeses.
