For a richer flavor, use roasted chicken instead of boiled. If you don't have Chihuahua cheese, Monterey Jack or a mild cheddar can be substituted. Adjust the amount of serrano chiles to your preferred level of spice. The sauce can be made a day ahead and stored in the refrigerator.
