In a mixing bowl, combine the diced chicken, celery, blue cheese, cream cheese, and hot sauce. Season generously with salt, black pepper, and cayenne pepper. Mix until well combined. (5 minutes)

In a small bowl, whisk together the egg and water to create an egg wash.

Lay out a wonton wrapper on a clean surface. Brush the edges with egg wash. Place a heaping tablespoon of the chicken mixture near one edge of the wrapper, leaving a 1/2-inch border. Spread the filling gently.

Roll the edge of the wrapper over the filling, then fold in both sides of the wrapper. Continue rolling tightly to form an egg roll. Ensure the ends are sealed. Place the assembled egg roll on a plastic-lined baking sheet, seam-side down. Repeat with remaining wrappers and filling. (30 minutes)

In a skillet, heat enough oil to reach halfway up the sides of the egg rolls. Heat the oil to 350 degrees F (175 degrees C) over medium heat.

Carefully add a batch of egg rolls to the hot oil, being careful not to overcrowd the skillet. Fry for about 2 minutes per side, until golden brown and crispy.

Remove the egg rolls and place them on a paper towel-lined plate to drain excess oil. Repeat with remaining egg rolls. (15 minutes)

Serve immediately with extra hot sauce, blue cheese dressing, or ranch dressing, and celery sticks.

For an extra crispy texture, double-fry the egg rolls: Fry them once, let them cool slightly, then fry them again briefly before serving.
Adjust the amount of hot sauce to your preference. For a milder flavor, use less hot sauce or substitute with a milder sauce.
The filling can be made ahead of time and stored in the refrigerator for up to 24 hours. Be sure to bring it to room temperature before assembling the egg rolls.
For a spicier kick, add a pinch of red pepper flakes to the filling.
