In a large skillet over medium heat, combine the enchilada sauce, salsa, and corn. Bring to a simmer. (2 minutes)

Add the tortillas to the simmering sauce and cook until they begin to soften, about 30 seconds per side. Transfer the tortillas to a plate and cover to keep warm.

Reduce the heat to medium-low. Gently crack each egg and slide it into the sauce, spacing them evenly apart. (1 minute)

Spoon a little sauce over each egg to help them cook evenly. Cover the skillet and poach the eggs to your desired doneness; about 3 minutes for soft yolks, or longer if you prefer them firmer. (3-5 minutes)

Place one warmed tortilla on each plate. Carefully lift two eggs from the sauce using a slotted spoon and place them on top of each tortilla. (1 minute)

Spoon the remaining sauce over the eggs, and then generously top with grated Colby cheese, sour cream, and sliced black olives. Serve immediately.

For a spicier kick, add a pinch of cayenne pepper to the sauce.
Feel free to substitute your favorite cheese for the Colby, such as Monterey Jack or cheddar.
Add a dollop of guacamole or sliced avocado for extra richness and flavor.
If you like, black beans, chorizo or bacon can be added to this recipe.
