Place the dough in a lightly oiled bowl, turning to coat. Cover with a clean towel and let rise in a warm place until doubled in size, about 1 hour 30 minutes.

Punch down the dough and turn it out onto a lightly floured surface. Divide the dough into 24 equal pieces. Shape each piece into a knot or a round roll. (15 minutes)

Arrange the rolls on a baking sheet lined with parchment paper. Cover loosely with a towel and let rise again for 30 minutes.

Preheat oven to 350 degrees F (175 degrees C).

In a small bowl, whisk together egg yolk and 1/2 teaspoon sugar until combined. Brush the tops of the rolls with the egg wash.

Bake for 18-22 minutes, or until golden brown. Transfer to a wire rack to cool slightly before serving.

For a richer flavor, substitute brown sugar for half of the granulated sugar.
A touch of cinnamon, nutmeg, or ginger can be added to the dough for a warmer spice profile.
Brush the baked rolls with melted butter for an extra touch of decadence.
To make ahead, shape the rolls and let them rise in the refrigerator overnight. Bring to room temperature before baking.
