In a large bowl, or the bowl of your stand mixer fitted with the paddle attachment, cream the softened butter for 30 seconds until smooth. Scrape down the sides of the bowl. (1 minute)

Add the granulated sugar and brown sugar and cream together for 2 minutes, until light and fluffy. Scrape down the bowl. (3 minutes)

Add the eggs, vanilla extract, and maple syrup. Mix for another 2 minutes until well combined. Scrape the bowl once more. (3 minutes)

In a separate bowl, whisk together the all-purpose flour, whole wheat flour, graham cracker crumbs, baking soda, baking powder, and salt. (2 minutes)

Gradually add the dry ingredients to the wet ingredients, mixing on low speed for 1 minute, until just combined. (2 minutes)

Add the rolled oats and mix on low for 1 to 1 1/2 minutes, until thoroughly blended. (2 minutes)

Stir in the chocolate chips, grated chocolate, walnuts, cashews, and pecans. Mix on low speed for about 30 seconds, just until evenly distributed. Be careful not to overmix. (1 minute)

Drop by rounded tablespoonfuls onto greased baking sheets, leaving space between each cookie. (5 minutes)

Bake in a preheated oven at 350 degrees F (175 degrees C) for 8 to 10 minutes, or until the edges are golden brown and the centers are set. (10 minutes)

Remove from the oven and let the cookies cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely. (15 minutes)
