Transfer the cooked carrot mixture to a food processor. Add the remaining 1/2 teaspoon of salt, apricot preserves, lemon juice, toasted sesame oil, ground coriander, and cayenne pepper.

Process until the mixture is almost smooth, achieving a creamy yet slightly textured consistency. For an extra smooth dip, process longer, stopping to scrape down the sides as needed.

For a richer flavor, roast the carrots instead of boiling them. Toss them with olive oil and the garlic and ginger, then roast at 400°F (200°C) until tender and slightly caramelized.
Adjust the cayenne pepper to your preference. If you prefer a milder dip, start with a pinch and add more to taste.
Toasting the sesame oil enhances its nutty flavor. Be careful not to burn it.
This dip can be made ahead of time and stored in the refrigerator for up to 3 days. The flavors will meld together even more, making it even more delicious.
