Follow The Directions

01

Step

Cook the Pasta: In a large pot, bring lightly salted water to a rolling boil over medium heat. Add fettuccine, return to a boil, and cook until al dente, about 8 minutes. Drain, reserving about 1/2 cup of pasta water. Keep pasta warm.

02

Step

Prepare the Alfredo Sauce: While the pasta cooks, melt 1 cup of butter with the heavy cream in a large saucepan over medium heat. Once the butter is melted, stir in the Romano cheese, Parmesan cheese, and 1/3 of the crushed garlic. Season with salt and pepper. Cook, stirring constantly, until the cheese is melted and the sauce has thickened slightly, about 5 minutes. Remove from heat.

03

Step

Sauté the Shrimp and Mushrooms: In a separate large saucepan, melt the remaining 1/4 cup of butter with the olive oil over medium heat. Add the chopped onion and sauté until softened and translucent, about 2-3 minutes. Stir in the diced mushrooms and the remaining crushed garlic. Increase the heat to medium-high and cook until the mushrooms are tender and lightly browned, about 5 minutes. Add the thawed shrimp and cook until they turn pink and opaque, about 2-3 minutes.

04

Step

Combine and Serve: Gently fold the shrimp and mushroom mixture into the Alfredo sauce. Add the drained fettuccine to the sauce, tossing to coat evenly. If the sauce is too thick, add a little of the reserved pasta water to reach desired consistency. Serve immediately.

For an even richer flavor, use freshly grated cheeses.
Adjust the amount of garlic to your preference.
A squeeze of fresh lemon juice at the end can brighten the dish.
Garnish with fresh parsley or chives for added color and flavor.
