Pour the tempered egg yolk mixture back into the saucepan with the remaining milk mixture. Cook over low heat, stirring constantly, until the custard thickens further and is very smooth, about 2-3 minutes. Do not boil.

Remove the saucepan from the heat and immediately stir in the finely chopped semi-sweet chocolate until completely melted and the custard is glossy and homogenous. (2 minutes)

Pour the chocolate custard into the prepared graham cracker crust, spreading evenly. Cover with plastic wrap, pressing it gently onto the surface of the custard to prevent a skin from forming. (2 minutes)

Chill in the refrigerator for at least 2 hours, or preferably overnight, to allow the custard to set completely.

To make the topping, combine the heavy whipping cream, granulated sugar, and vanilla extract in a chilled bowl.

Beat with an electric mixer on medium speed until soft peaks form. Be careful not to over-beat. (3 minutes)
