Keep them in the hot water until ready to fill. Wash new, unused lids and rings in warm, soapy water. (Prep time: 15 minutes)

Combine and Cook: In a medium, heavy-bottomed saucepan, combine the chopped peaches and water. Gradually whisk in the fruit pectin, ensuring it is well blended to avoid clumps. Bring the mixture to a vigorous boil over high heat, stirring constantly to prevent scorching. Once boiling, continue stirring and boiling for exactly 1 minute. (Cook time: 20 minutes)

Sweeten and Skim: Remove the saucepan from the heat. Gently stir in the sucralose until it is fully dissolved. Use a metal spoon to carefully skim off any foam that forms on the surface of the jam. This step ensures a clear, beautiful final product. (Prep time: 5 minutes)

Fill the Jars: Immediately ladle the hot jam into the sterilized jars, leaving approximately 1/8 inch of headspace at the top. Use a clean knife or thin spatula to gently run around the inside of each jar, releasing any trapped air bubbles. (Prep time: 10 minutes)

Seal and Process: Wipe the rims of the jars with a clean, damp paper towel to remove any residue. Place the lids on top and screw the rings on tightly, but not excessively. Place a rack in the bottom of a large stockpot and fill it halfway with water. Bring the water to a boil. Carefully lower the filled jars into the boiling water using a jar lifter, ensuring they are at least 2 inches apart. Add more boiling water, if necessary, to cover the jars by at least 1 inch. Bring the water back to a gentle simmer, cover the pot, and process for 10 minutes. (Cook time: 30 minutes)

Cool and Check Seals: Carefully remove the jars from the stockpot using the jar lifter and place them on a towel-lined surface, several inches apart. Allow the jars to cool completely, undisturbed, for 2 to 3 hours. As the jars cool, you should hear a popping sound as the lids seal. After cooling, test the seal by pressing down on the center of each lid. If the lid does not flex or move up and down, the jar is properly sealed. If a lid springs back, it is not sealed and the preserves should be refrigerated immediately. (Cooling time: 2-3 hours)

For a smoother texture, you can puree half of the peaches before adding them to the saucepan.
Adjust the amount of sucralose to your personal preference. Start with the recommended amount and add more, a little at a time, until you reach the desired sweetness.
If you don't have sucralose on hand, other sugar substitutes can be used, but be sure to adjust the amount accordingly as sweetness levels may vary.
