Sear the Pork: Heat bacon fat in a large skillet over medium-high heat. Add the pork and sear on all sides until browned. (About 3 minutes per side)

Slow Cook the Pork: Transfer the seared pork to a slow cooker. Pour in beef broth and coat the pork with tomato paste. Add the roasted Anaheim peppers, onion, red bell pepper, yellow bell pepper, lime juice, garlic, cumin, oregano, chili powder, cayenne pepper, and bay leaf.

Shred and Serve: Once the pork is cooked, shred it using two forks. Serve with sliced avocados, fresh cilantro, and lime wedges for squeezing.

For a richer flavor, consider using smoked paprika instead of chili powder.
If you don't have bacon fat, olive oil or coconut oil can be used as a substitute.
To reduce the cooking time, use an Instant Pot and cook on high pressure for 60 minutes, followed by a natural pressure release for 15 minutes.
This pulled pork is excellent in tacos, salads, or served over cauliflower rice.
