For a smoother preserve, you can use an immersion blender to partially puree the mixture after cooking. Be careful not to over-blend, as this can affect the set. Adjust the amount of ginger to your preference. For a spicier preserve, add a pinch of red pepper flakes along with the fresh ginger. Pears vary in their pectin content. If your preserves don't seem to be thickening, you can add a small amount of commercial pectin according to the package directions.
