In a medium saucepan, combine gelatin, 1/4 cup sugar, and salt. Mix well and set aside. (Prep time: 2 minutes)

Add the red food coloring and mix until the color is evenly distributed. Chill in the refrigerator until the mixture is slightly thicker than the consistency of unbeaten egg whites. (Chill time: 60-90 minutes)

In a separate small bowl, beat the egg whites until stiff peaks form. Gradually add the remaining sugar and continue beating until very stiff and glossy.

Gently fold the beaten egg whites into the chilled gelatin mixture, being careful not to deflate the whites. Then, gently fold in the whipped cream until just combined.

Pour the mixture into a 5-cup heart-shaped mold. Chill in the refrigerator until firm. (Chill time: at least 3 hours or overnight)

To unmold, dip the mold briefly in warm water. Invert onto a serving plate. Garnish with additional whipped cream, if desired. Serve chilled.

For a stronger peppermint flavor, you can crush some additional candy canes and sprinkle them on top of the mold before serving.
If you don't have a heart-shaped mold, you can use any decorative mold or even a simple bowl.
To ensure the gelatin dissolves completely, whisk constantly while heating, and avoid boiling the mixture.
The chilling time may vary depending on your refrigerator. Check for firmness before unmolding.
This recipe can easily be doubled for a larger mold or to serve more people.
