Follow The Directions

01

Step
2 mins

In a large bowl, whisk together the gluten-free flour and salt. (2 minutes)

02

Step
1 mins

In a separate bowl, whisk together the eggs and milk until smooth. (1 minute)

03

Step
3 mins

Gradually pour the wet ingredients into the dry ingredients, whisking constantly to avoid lumps. (3 minutes)

04

Step
1 mins

Stir in the melted butter until the batter is smooth and homogenous. (1 minute)

05

Step
2 hrs

Cover the bowl with plastic wrap and let the batter rest at room temperature for at least 30 minutes, or up to 2 hours. This allows the flour to fully hydrate and the batter to relax, resulting in more tender crêpes. (Resting Time: 30 minutes - 2 hours)

06

Step
5 mins

Heat a lightly buttered 8-inch non-stick skillet or crêpe pan over medium heat. The pan is ready when a drop of water sizzles and evaporates almost immediately. (5 minutes)

07

Step
1 mins

Pour approximately 1/4 cup of batter onto the hot skillet, immediately tilting and swirling the pan to spread the batter into a thin, even circle. (1 minute)

08

Step
2 mins

Cook for 1-2 minutes, or until the edges of the crêpe begin to lift and the bottom is lightly golden brown. (1-2 minutes)

09

Step
1 mins

Carefully flip the crêpe with a thin spatula and cook for another 30-60 seconds, or until the other side is lightly golden brown. (30-60 seconds)

10

Step

Slide the cooked crêpe onto a plate and repeat with the remaining batter, stacking the crêpes as you go. You may need to lightly re-butter the pan between crêpes to prevent sticking.

For best results, use a high-quality gluten-free flour blend that is specifically designed for baking. Bob's Red Mill Gluten-Free 1-to-1 Baking Flour is a reliable option.
The batter should be thin and pourable. If it seems too thick, add a tablespoon or two of milk until you reach the desired consistency.
Don't overcrowd the pan when cooking the crêpes. Work in batches and keep the cooked crêpes warm in a low oven (around 200°F) until ready to serve.
Crêpes can be made ahead of time and stored in the refrigerator for up to 2 days. Reheat them gently in a skillet or microwave before serving.
Experiment with different fillings! Try sweet options like Nutella, berries, whipped cream, or lemon curd, or savory options like ham and cheese, spinach and ricotta, or roasted vegetables.

I was skeptical about gluten-free crêpes, but these are fantastic! My family loved them with both sweet and savory fillings.

The resting time is key! Don't skip it. It really makes a difference in the texture of the crêpes.
