Follow The Directions

01

Step

Preheat your waffle iron according to the manufacturer's instructions. (5 minutes)

02

Step

In a clean, dry glass or metal bowl, beat the egg whites until soft peaks form. They should gently mound when the beater or whisk is lifted. (3-5 minutes)

03

Step

In a large bowl, whisk together the egg yolks, buttermilk, pumpkin puree, and melted butter until smooth. Add the flour, brown sugar, baking powder, cinnamon, baking soda, ginger, salt, and cloves. Whisk until just combined, ensuring no lumps remain. (5 minutes)

04

Step

Gently fold the beaten egg whites into the batter until just combined. Be careful not to overmix, as this will deflate the batter. (2-3 minutes)

05

Step

Lightly coat the waffle iron with cooking spray. Ladle approximately 2/3 cup of batter onto the prepared iron for each waffle. Cook until golden brown and crisp, usually 4 to 5 minutes, or according to your waffle iron's instructions.

For an extra layer of flavor, try adding a teaspoon of vanilla extract to the wet ingredients.
These waffles are delicious served with maple syrup, whipped cream, toasted pecans, or a dusting of powdered sugar.
If you don't have buttermilk, you can make a substitute by adding 1 tablespoon of lemon juice or white vinegar to a liquid measuring cup, then filling the cup to the 1-pint mark with milk. Let it stand for 5 minutes before using.
To keep the waffles warm while cooking the remaining batter, place them on a wire rack in a preheated oven at 200°F (95°C).
For a richer flavor, try using melted brown butter instead of regular melted butter. Simply cook the butter over medium heat until it turns a nutty brown color and smells fragrant.
