In a small, heatproof bowl, combine the coriander seeds, cumin seeds, black peppercorns, whole cloves, cardamom seeds, bay leaves, dried chile de arbol peppers, and cinnamon pieces.

Heat a small skillet over medium-high heat. Once hot, sprinkle the spice mixture into the skillet and toast, shaking the pan every few seconds, until the coriander and cumin seeds are reddish brown, the cinnamon and bay leaves appear brittle and crinkly, the chiles are blackened in spots, and the other spices are slightly ashy black. The mixture should be highly fragrant. (1-2 minutes)

Immediately transfer the toasted spices to the bowl to cool completely.

Once cooled, crumble the chiles and grind everything in a spice grinder (or a coffee grinder or high-powered blender) to the consistency of finely ground black pepper.

Store the Garam Masala in a sealed container in a cool, dark place for up to 3 months to preserve its potency.

For a milder Garam Masala, remove the seeds from the dried chile de arbol peppers before toasting.
To intensify the flavors, you can dry-roast each spice individually before combining them.
Use a high-quality spice grinder for the best results. If using a coffee grinder, make sure it is thoroughly cleaned before and after grinding spices.
Adjust the quantity of each spice to suit your personal preference.
