Render the bacon in a large skillet over medium heat until beautifully crisp, about 5 minutes. Transfer the crispy bacon to paper towels to drain, reserving the precious bacon drippings in the skillet. Add the chopped onion to the skillet and cook in the bacon drippings until softened and translucent, about 3-5 minutes.

While the onion softens, cook the ramen noodles in a saucepan according to package directions, adding the frozen peas during the last minute of cooking to retain their vibrant color and texture. Reserve 1/2 cup of the starchy cooking water before draining the noodles and peas.

In a mixing bowl, whisk together the egg, Parmesan cheese, the onion and bacon drippings, salt, and red pepper flakes (if using) until well combined. Immediately add the hot, drained ramen noodles and crispy bacon to the bowl. Toss vigorously to coat every strand with the luscious sauce, adding enough of the reserved cooking water, a tablespoon at a time, to achieve a luxuriously creamy consistency.

For an even richer flavor, consider using pancetta instead of bacon.
Freshly grated Parmesan cheese is highly recommended for its superior flavor and texture.
Adjust the amount of reserved cooking water to achieve your desired sauce consistency. It should be creamy and cling to the noodles, not watery.
Serve immediately, garnished with additional Parmesan cheese and fresh parsley.
