Hydrate the Chipotle Peppers: In a saucepan, bring water to a boil. Add the dried chipotle peppers and reduce heat to a simmer. Cook until the peppers are softened, approximately 30 minutes. Drain the peppers and allow them to cool. Once cooled, remove the stems and seeds.

Roast the Tomatoes: Grill the roma tomatoes on the hot grate until their skins are blackened and begin to peel, turning frequently to ensure even charring on all sides, about 10 minutes. Remove from the grill and let cool slightly.

Blend the Salsa: In a food processor, combine the grilled tomatoes, hydrated chipotle peppers, chopped yellow onion, garlic, white vinegar, salt, black pepper, and lime juice. Pulse a few times to coarsely chop the ingredients, then process until the salsa reaches your desired consistency. For a smoother salsa, process longer.

Chill and Develop Flavors: Transfer the salsa to an airtight container and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to meld and deepen.

For a milder salsa, reduce the number of chipotle peppers or ensure all seeds are removed.
If you don't have a grill, you can roast the tomatoes under the broiler in your oven. Keep a close watch to prevent burning.
Adjust the salt, pepper, and lime juice to your personal preference.
This salsa pairs wonderfully with tortilla chips, tacos, grilled meats, and even eggs!
