For a richer flavor, use whole milk or add a splash of cream at the end. If you don't have a double boiler, a heavy-bottomed saucepan over very low heat will also work. Be sure to stir frequently. Feel free to experiment with different spices, such as cinnamon, cardamom, or lemon zest, to customize the flavor profile. To prevent a skin from forming on the surface of the pudding while chilling, press a piece of plastic wrap directly onto the surface.
