For a deeper garlic flavor, use roasted garlic oil instead of regular olive oil. If you don't have fresh spinach, frozen spinach (thawed and squeezed dry) can be substituted. A splash of vodka added to the sauce will add a nice depth of flavor. For a spicier dish, add a pinch of red pepper flakes to the sauce. Feel free to substitute other cheeses, such as Parmesan or Asiago.
