For the best flavor and color, use wild or cultivated rugosa roses that have not been treated with pesticides. Harvest them in the fall when they are at their peak ripeness and display a bright red color. To make seeding easier, soak the rose hips in water for a few hours before trimming and seeding. If you prefer a smoother jam, you can strain the blended rose hip mixture through a fine-mesh sieve before adding the sugar. This jam is delicious on toast, scones, or as a topping for yogurt or ice cream. It also makes a lovely homemade gift.
