In a blender, combine the prepared rose hips, water, and lemon juice. Blend until smooth, approximately 15 seconds. It's fine if small bits of rose hip skin remain.

With the blender running, gradually add the sugar. Continue blending until the sugar is completely dissolved, about 30 seconds.

In a saucepan, whisk the powdered fruit pectin into the remaining 0.75 cup of water. Bring the mixture to a rolling boil over medium-high heat and boil hard for 1 minute, stirring constantly.

Slowly pour the boiling pectin mixture into the rose hip mixture, blending for approximately 30 seconds until well combined.

Pour the jam into small, airtight containers. Store in the refrigerator for up to a few weeks, or freeze for longer storage, up to one year.

For the best flavor and color, use wild or cultivated rugosa roses that have not been treated with pesticides. Harvest them in the fall when they are at their peak ripeness and display a bright red color.
To make seeding easier, soak the rose hips in water for a few hours before trimming and seeding.
If you prefer a smoother jam, you can strain the blended rose hip mixture through a fine-mesh sieve before adding the sugar.
This jam is delicious on toast, scones, or as a topping for yogurt or ice cream. It also makes a lovely homemade gift.
