Follow The Directions

01

Step
12 mins

In a large saucepan or Dutch oven, melt the butter over medium heat. (2 minutes)

02

Step
52 mins

Add the sliced leek, chopped rosemary, and minced garlic. Cook, stirring occasionally, until the leek is softened and translucent, but not browned. (15 minutes)

03

Step
5 mins

Add the diced tomatoes (with their juice) and cayenne pepper. Bring the mixture to a gentle simmer. (5 minutes)

04

Step
2 mins

Stir in the minced basil and continue to simmer, uncovered, until the soup has reduced by about half and the flavors have melded together. (1 hour)

05

Step

Carefully transfer the soup, in batches if necessary, to a blender. Secure the lid tightly and blend until completely smooth. (5 minutes)

06

Step

Return the pureed soup to the saucepan. Stir in heavy cream to achieve your desired consistency and richness. (2 minutes)

07

Step

Season with salt and freshly ground black pepper to taste. Heat gently until warmed through. (3 minutes)

For an even smoother texture, strain the pureed soup through a fine-mesh sieve before adding the cream.
If you don't have fresh rosemary, you can use 1 teaspoon of dried rosemary. Add it along with the tomatoes.
For a vegan version, substitute the butter with olive oil and omit the cream, or use a plant-based cream alternative.
A splash of dry sherry or white wine added during the leek-cooking stage will add complexity.
