Follow The Directions

01

Step

Preheat the oven to 350 degrees F (175 degrees C). Arrange taco shells on a baking sheet. (5 minutes)

02

Step

Heat canola oil in a large skillet over medium heat. Add diced onion and pressed garlic, sautéing until the onion softens and becomes translucent. (5 minutes)

03

Step

In the same skillet, add shredded rotisserie chicken, tomato sauce, 3 tablespoons of salsa, and taco seasoning. Stir well to combine and cook until heated through, stirring occasionally. (6 minutes)

04

Step

While the chicken mixture simmers, transfer refried beans to a microwave-safe container. Cover and microwave on high until heated through, stirring once halfway through. (5 minutes)

05

Step

Warm the taco shells in the preheated oven until crisp and heated through. (5 minutes)

06

Step

Arrange warmed taco shells on a serving platter. Place the remaining salsa, chicken mixture, refried beans, shredded lettuce, Mexican cheese blend, bell peppers, and diced tomatoes in separate serving bowls to create a build-your-own taco bar.

For a spicier kick, add a pinch of cayenne pepper to the chicken mixture.
Feel free to substitute ground beef or turkey for the rotisserie chicken.
Add a dollop of sour cream or Greek yogurt for extra creaminess.
Get creative with your toppings! Consider adding avocado, pickled onions, or a drizzle of hot sauce.
For gluten-free option, use corn tortillas.

The taco seasoning was a bit too salty for my taste, so I used half the packet and it was perfect.
