For a milder flavor, soak the diced onion in cold water for 10 minutes, then drain well before adding it to the salsa. If you prefer a smoother salsa, you can pulse the ingredients in a food processor a few times, but be careful not to over-process it. Chimol is best served fresh, but it can be stored in an airtight container in the refrigerator for up to 2 days. The flavors will continue to develop, but the salsa may become slightly watery.
