Transfer the drained tomatoes to a medium-sized mixing bowl. Add the minced shallots, garlic, parsley, tarragon, Kalamata olives, and basil. Gently fold the ingredients together until evenly distributed. (5 minutes)

Drizzle the extra-virgin olive oil and lemon juice over the vegetable mixture. Stir gently to combine. Season to taste with sea salt and freshly ground black pepper. (2 minutes)

Allow the sauce vierge to sit at room temperature for at least 30 minutes to allow the flavors to meld and develop. Stir occasionally. (30 minutes)

For the best flavor, use the freshest, highest-quality ingredients available. Ripe, in-season tomatoes are key.
Adjust the amount of lemon juice and olive oil to your preference. Taste and season accordingly.
If you don't have Kalamata olives, other briny olives such as Nicoise or Castelvetrano can be substituted.
This sauce is best served at room temperature or slightly chilled. Avoid refrigerating for extended periods as it can dull the flavors.
Try adding a pinch of red pepper flakes for a touch of heat.
