Prepare the Sausage: Heat a large skillet over medium-high heat. Add the bulk pork sausage and cook, breaking it apart with a spoon, until browned and crumbly (5-7 minutes). Drain off any excess grease and set the cooked sausage aside.

Whisk the Egg Mixture: In a large bowl, whisk together 2 1/2 cups of milk, the eggs, and dry mustard until well combined.

Assemble the Bake: Spread the torn bread squares evenly across the bottom of a greased 9x13 inch baking dish. Sprinkle the shredded mozzarella cheese over the bread, followed by the cooked sausage. Pour the egg mixture evenly over the sausage and cheese layer. Cover the baking dish tightly with plastic wrap and refrigerate for at least 8 hours, or preferably overnight.

Preheat the Oven: Preheat your oven to 300 degrees F (150 degrees C).

Prepare the Soup Topping: In a separate bowl, whisk together the condensed cream of mushroom soup and the remaining 1 cup of milk until smooth.

Bake the Sausage Bake: Remove the plastic wrap from the baking dish. Pour the cream of mushroom soup mixture evenly over the top of the sausage bake. Place the baking dish in the preheated oven and bake for approximately 90 minutes, or until the center is set and the top is golden brown.

For a richer flavor, use Italian sausage or add a pinch of red pepper flakes to the sausage while cooking.
If you don't have time to refrigerate the bake overnight, you can bake it immediately, but the texture will be slightly different.
To check for doneness, insert a knife into the center of the bake. If it comes out clean, it's ready.
Let the bake cool for 10-15 minutes before slicing and serving.
