Follow The Directions

01

Step
10 mins

Prepare the Crumb Topping: In a small bowl, combine the flour, brown sugar, and cold butter. Use a pastry blender or your fingertips to cut the butter into the dry ingredients until the mixture resembles coarse crumbs. Measure out 1/2 cup of this mixture and set aside for the topping. (Prep time: 10 minutes)

02

Step
5 mins

Make the Filling: In a separate bowl, lightly beat the egg. Whisk in the molasses and cold water until well combined. Add the remaining crumb mixture from the first bowl to the molasses mixture and stir thoroughly to incorporate. (Prep time: 5 minutes)

03

Step
2 mins

Activate Baking Soda: In a small cup, stir the baking soda into the boiling water. It will fizz. Immediately add this mixture to the molasses mixture and stir well to combine. (Prep time: 2 minutes)

04

Step
35 mins

Assemble and Bake: Pour the filling into the prepared pie crust. Evenly sprinkle the reserved crumb topping over the filling. Bake in a preheated oven at 375 degrees F (190 degrees C) for 35 minutes, or until the filling is set and the topping is golden brown. (Bake time: 35 minutes)

For best results, use a high-quality molasses, such as unsulphured molasses, for a richer flavor.
Make sure your butter is cold when making the crumb topping. This will help create a more tender and crumbly texture.
If the crust edges are browning too quickly during baking, cover them with foil or use a pie shield.
Allow the pie to cool completely before serving. This will allow the filling to set properly.

I was a bit hesitant about the molasses, but it wasn't overly sweet at all. A really delicious and comforting pie.
