In a skillet over medium heat, melt butter. Add chopped onion and bell pepper. Cook until onion is softened and translucent, stirring occasionally (about 5 minutes).

In a slow cooker, combine condensed cream of chicken soup, milk, and ranch dressing mix. Whisk until well combined. Stir in the cubed processed cheese food. Add the frozen chopped broccoli, finely chopped celery, diced potatoes, finely chopped carrots, and the cooked onion-bell pepper mixture.

Cover the slow cooker and cook on Low heat, stirring occasionally to prevent sticking, until the cheese is completely melted and the vegetables are tender (3 to 4 hours).

For a richer flavor, consider using sharp cheddar cheese in addition to or in place of the processed cheese food.
If you prefer a smoother soup, use an immersion blender to partially blend the soup after cooking. Be careful not to over-blend, as it can become too thin.
To prevent the cheese from sticking to the bottom of the slow cooker, stir the soup every hour or so during cooking.
