In a large stockpot, combine the ham hocks and enough water to cover them by about 2 inches. Bring to a gentle boil over medium-high heat. (Approximately 15 minutes)

As the water heats, gradually add the collard greens to the pot, stirring to submerge them as they wilt. This may need to be done in batches. (Approximately 10 minutes)

Once all the greens have been added and have wilted slightly, carefully transfer the greens and ham hocks to your slow cooker. Layer the greens with the ham hocks and chopped pickled jalapeños. (Approximately 5 minutes)

Stir in the baking soda, olive oil, black pepper, and garlic powder. (Approximately 2 minutes)

Cover the slow cooker and cook on high for 1 hour, then reduce the heat to low and cook for 8-10 hours, or until the greens are very tender and the ham hocks are falling apart. (8-10 hours)

For a richer flavor, consider browning the ham hocks in a skillet before adding them to the slow cooker.
If you prefer less heat, reduce the amount of pickled jalapeños or remove the seeds before chopping.
Taste and adjust seasonings as needed before serving. A splash of apple cider vinegar can brighten the flavors at the end.
These greens are even better the next day, as the flavors have had more time to meld!
