While the slow cooker is heating, heat a medium saucepan over medium heat. Add cumin and coriander to the dry pan and toast, stirring constantly, until fragrant (about 20 seconds). Add olive oil, then add the diced onion. Cook, stirring occasionally, until the onion softens, about 2-3 minutes. Add the minced garlic and sauté for another 30 seconds until fragrant, being careful not to burn it. Remove the saucepan from heat and transfer the contents to the slow cooker. (10 minutes)
