Prepare the Parmesan mixture: In a small bowl, mix together the grated Parmesan cheese, garlic powder, remaining 1/4 teaspoon salt, and black pepper. (1 minute)

Layer the gratin: Arrange half of the potato slices in an even layer on the bottom of the prepared slow cooker. Sprinkle with half of the Parmesan mixture and half of the chopped onion. Pour half of the cheddar cheese sauce evenly over the potatoes. Repeat the layers with the remaining potato slices, Parmesan mixture, onion, and cheese sauce. (15 minutes)

Cook: Cover the opening of the slow cooker completely with a layer of paper towels (this helps to absorb excess moisture). Cover with the lid and cook on HIGH for 3 to 4 hours, or until the potatoes are tender and easily pierced with a fork. Replace the paper towels halfway through the cooking time. (3-4 hours)

Garnish and serve: Once cooked, carefully remove the lid and paper towels. Garnish with the chopped fresh chives before serving. (2 minutes)

For a richer flavor, use heavy cream instead of milk.
If you don't have sour cream chive dip, you can substitute plain sour cream and add a pinch of onion powder.
Ensure the potatoes are sliced thinly and evenly for uniform cooking.
Adjust cooking time based on your slow cooker; check for tenderness after 3 hours.
