In a large bowl, whisk together the cream of mushroom soup, brown gravy mix, country gravy mix, and vegetable dip mix until well combined and smooth. Gradually add water, stirring continuously, until you reach your desired consistency. A thicker consistency will result in a richer gravy, while a thinner consistency may expedite the cooking process. (5 minutes)

Place the tri-tip roast in the slow cooker. Pour the prepared soup mixture evenly over the roast, ensuring it's well coated. Arrange the coarsely chopped onions and baby carrots around the roast. (5 minutes)

Cover the slow cooker and cook on Low for approximately 7 hours, or until the beef is incredibly tender and easily shreds with a fork. (7 hours)

For an even deeper flavor, sear the tri-tip roast in a hot skillet with a little olive oil before placing it in the slow cooker. This will create a beautiful crust and enhance the beefy notes.
If you prefer a thicker gravy, remove the roast from the slow cooker after cooking and set aside to rest. Whisk together 2 tablespoons of cornstarch with 2 tablespoons of cold water to create a slurry. Stir the slurry into the slow cooker juices and cook on High for 10-15 minutes, or until the gravy has thickened to your liking. Return the roast to the slow cooker to warm through before serving.
Serve this succulent tri-tip roast with a side of fluffy white rice, mashed potatoes, or creamy polenta to soak up all the delicious gravy. Steamed green beans or a crisp salad would also make excellent accompaniments.
