For an extra-smooth sauce, consider straining it through a fine-mesh sieve before serving. If the sauce becomes too thick, whisk in a teaspoon of warm water to thin it out. If it becomes too thin, whisk in another egg yolk that has been lightly beaten. Make sure the bottom pot of the double boiler doesn't touch the top pot. If the eggs get too hot, they can curdle.
