In a large resealable plastic bag, whisk together 1/3 cup olive oil, lime juice, chili powder, brown sugar, cumin, smoked paprika, and garlic powder until well combined. (5 minutes)

Add the chicken tenders to the bag, ensuring they are fully coated in the marinade. Seal the bag, removing any excess air. Transfer to the refrigerator and marinate for at least 2 hours, or preferably overnight. (2 hours to overnight)

Preheat your grill to medium-high heat, around 425 degrees F. (5 minutes)

In a large bowl, combine the sliced red pepper, yellow pepper, chopped onion, jalapeno rings, and corn kernels. Drizzle with the remaining olive oil and toss gently to coat. Season generously with salt and pepper to taste. (5 minutes)

Lay out four sheets of heavy-duty aluminum foil. Evenly distribute one-fourth of the pepper and corn mixture onto the center of each foil sheet. (5 minutes)

Place two marinated chicken tenders on top of the vegetable mixture on each foil sheet. (2 minutes)

Bring up the sides of the foil to meet in the center above the chicken and vegetables. Double-fold the top edges to create a tight seal. Then, fold in the ends of the packet, ensuring they are also tightly sealed to prevent steam from escaping during grilling. Ensure there is room for heat circulation inside. Repeat to make four packets. (10 minutes)

Place the foil packets on the preheated grill. Cover the grill and cook for 15-20 minutes, or until the chicken is cooked through, tender, and the juices run clear when pierced with a fork, or a meat thermometer inserted into the thickest part of the chicken registers 165 degrees F. (15-20 minutes)

Carefully remove the foil packets from the grill. Let them rest for a few minutes before opening, as they will contain hot steam. Open the packets carefully to avoid steam burns. Serve immediately and enjoy!

For an extra layer of flavor, consider adding a sprinkle of cotija cheese or a dollop of sour cream to the packets just before serving.
Adjust the amount of jalapeno pepper to your preferred level of spiciness. Remove the seeds and membranes for a milder flavor.
Feel free to substitute other vegetables like zucchini, summer squash, or black beans to customize the packets to your liking.
The chicken can be marinated for up to 24 hours for maximum flavor. Be sure to keep it refrigerated during marinating.
If you don't have a grill, you can bake the foil packets in a preheated oven at 400 degrees F for 25-30 minutes, or until the chicken is cooked through.
