Follow The Directions

01

Step

Bring a large pot of salted water to a rolling boil. Add spaghetti and cook according to package directions, about 8-10 minutes, until al dente. Reserve about 1 cup of pasta water before draining. (8-10 minutes)

02

Step

While pasta cooks, in a large skillet or sauté pan, heat olive oil and butter over medium-low heat. (2 minutes)

03

Step

Add onion and cook until softened and translucent, about 5 minutes. Add garlic and cook until fragrant, about 1 minute, being careful not to burn it. (6 minutes)

04

Step

Add drained clams to the skillet and cook for 3 minutes, stirring occasionally, until heated through. (3 minutes)

05

Step

Stir in parsley and reserved clam juice. Add enough water to equal 2 cups liquid. (2 minutes)

06

Step

Bring the sauce to a simmer. Reduce heat to low, cover, and cook for 10 minutes, stirring occasionally, to allow the flavors to meld. (10 minutes)

07

Step

Add the cooked pasta to the skillet with the clam sauce. Toss to coat, adding a little of the reserved pasta water if needed to create a light sauce that clings to the pasta.

08

Step

Season with salt and pepper to taste.

09

Step

Serve immediately, garnished with additional fresh parsley and freshly grated Parmesan cheese, if desired.

For a richer flavor, consider using dry white wine (such as Pinot Grigio or Sauvignon Blanc) to deglaze the pan after sautéing the garlic.
Fresh clams can be used in place of canned clams. Steam them open, reserve the liquid, and chop the meat before adding them to the sauce.
A pinch of red pepper flakes can add a touch of heat to this dish.
Be careful not to overcook the clams, as they can become rubbery.
