For an even smoother sauce, use an immersion blender to partially blend the sauce after simmering. Add a pinch of red pepper flakes for a touch of heat. Fresh herbs, such as basil or parsley, can be added during the last few minutes of simmering for a brighter flavor. This sauce can be made ahead of time and stored in the refrigerator for up to 3 days, or frozen for longer storage. For a meat sauce, brown ground beef, Italian sausage, or other meats in the saucepan before adding the vegetables.
