Follow The Directions

01

Step

Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium heat. Add carrots, cabbage, cauliflower, and leeks. Cook, stirring occasionally, until cabbage begins to wilt, about 5 minutes.

02

Step

Stir in minced garlic and tomato paste. Cook, stirring constantly, until fragrant, about 1-2 minutes. Be careful not to burn the garlic.

03

Step

Pour in 2 cups of vegetable broth, then cover and simmer for 10 minutes, allowing the vegetables to soften.

04

Step

Add diced tomatoes (with their juice) and the remaining 2 cups of vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes, allowing the flavors to meld.

05

Step

Carefully transfer the soup to a blender or use an immersion blender to puree until smooth. (Optional, but recommended for a creamier texture).

06

Step

Return the pureed soup to the pot. Stir in milk and butter. Bring to a gentle simmer and cook for 1 minute.

07

Step

Season to taste with sea salt and freshly ground black pepper. Serve hot.

For a richer flavor, use homemade vegetable broth.
Adjust the amount of garlic to your preference. If you like a milder flavor, use fewer cloves.
To make this soup vegan, substitute the milk with a plant-based alternative such as almond or soy milk, and the butter with a tablespoon of olive oil.
This soup is delicious served with a crusty bread for dipping.
