Step

Preheat oven to 350 degrees F (175 degrees C). Lightly grease a large baking sheet with cooking spray. (5 minutes)

Heat a large pan over medium-high heat and coat with cooking spray. Sauté spinach, green onions, dill, garlic, salt, and pepper until spinach wilts and begins to release its liquid. (3-5 minutes)

In a large bowl, combine mozzarella, Parmesan, and feta cheeses. Add egg and the spinach mixture; mix thoroughly. (2 minutes)

Lay 1 puff pastry sheet on the prepared baking sheet. Trace a wet fingertip around the edge to moisten. Spread the spinach and cheese mixture evenly in the center, leaving a 1/2-inch border. Top with the second sheet of puff pastry and press down the edges to seal. Cut two slits on top to allow steam to escape. Lightly spray the top with cooking spray. (10 minutes)

Bake in the preheated oven until golden brown, approximately 15-20 minutes. Let cool for 5 minutes before slicing into sections using a pizza cutter or sharp knife. (25 minutes)

For an even richer flavor, consider adding a pinch of nutmeg to the cheese mixture.
If you prefer a crispier crust, brush the top of the puff pastry with melted butter or an egg wash before baking.
Leftovers can be stored in the refrigerator for up to 3 days. Reheat in the oven for best results.
