Bring a large pot of salted water to a rolling boil. Add penne pasta and cook according to package directions, about 10-12 minutes, until al dente. Reserve 1/2 cup of pasta water before draining.

While the pasta is cooking, melt butter in a large skillet over medium heat. Season chicken breasts with 1/2 teaspoon Italian seasoning and 1/4 teaspoon salt.

Place chicken in the skillet and cook for about 5-7 minutes per side, or until cooked through and an instant-read thermometer inserted into the thickest part registers 165°F (74°C). Remove chicken from the skillet and set aside to rest.

Add minced shallot and garlic to the skillet and cook for about 1 minute, until fragrant. Stir in crushed tomato purée, remaining Italian seasoning, remaining salt, and red pepper flakes. Bring to a simmer and cook for 5 minutes, stirring occasionally.

Stir in heavy whipping cream and vodka. Then stir in Parmesan cheese until melted and the sauce is smooth.

Slice the cooked chicken breasts into thin strips and add them to the sauce. Toss to coat.

Add the drained pasta to the skillet with the sauce. Toss to combine. If the sauce is too thick, add reserved pasta water, 1 tablespoon at a time, until desired consistency is reached.

Garnish with julienned basil and additional Parmesan cheese, if desired. Serve immediately and enjoy!

For a vegetarian option, substitute the chicken with sauteed mushrooms or roasted vegetables.
Adjust the amount of red pepper flakes to your preference for spiciness.
If you don't have vodka, you can substitute it with chicken broth or white wine.
Freshly grated Parmesan cheese is recommended for the best flavor.
Don't overcook the pasta. Al dente pasta holds its shape better in the sauce.
