Follow The Directions

01

Step
5 mins

In a large bowl, combine the cauliflower florets, red bell pepper, carrot, red onion, celery, green olives, and parsley. Season generously with salt and freshly ground black pepper. (5 minutes)

02

Step
3 mins

In a separate small bowl, whisk together the white vinegar, olive oil, minced garlic, freeze-dried dill, and crushed red pepper flakes (if using) until well combined and emulsified. (2 minutes)

03

Step
2 mins

Pour the dressing over the cauliflower mixture and gently toss until all the vegetables are evenly coated. (3 minutes)

04

Step
1 hrs

Cover the bowl tightly with plastic wrap or transfer the salad to an airtight container. Refrigerate for at least 1 hour, or preferably longer, to allow the flavors to meld and the cauliflower to marinate. (1 hour +)

05

Step

Before serving, give the salad another gentle toss. Adjust seasoning with salt and pepper as needed. Serve chilled.

For a milder flavor, omit the crushed red pepper flakes entirely, or reduce the amount to ¼ teaspoon.
Feel free to add other vegetables you enjoy, such as broccoli florets, cucumber, or pickled vegetables.
The salad can be prepared up to 24 hours in advance and stored in the refrigerator. The flavors will continue to develop over time.
For best results, use fresh, high-quality ingredients.
If you don't have freeze-dried dill, you can substitute 1 teaspoon of fresh dill, minced.

I omitted the red pepper flakes for my kids, and they still loved it. It's a great way to get them to eat their vegetables.
