Follow The Directions

01

Step

In a large pan or skillet, heat vegetable oil over medium heat. Sauté chopped onion, minced garlic, and red pepper flakes until the garlic is fragrant and lightly browned, approximately 2-3 minutes.

02

Step

Add the thawed shrimp to the pan. Cook, stirring occasionally, until the shrimp turn pink and begin to firm up, about 5 minutes.

03

Step

Stir in the fire-roasted diced tomatoes, creamy peanut butter, and red chile paste into the shrimp mixture. Bring the sauce to a gentle boil, then reduce heat to low and simmer for about 20 minutes, or until the sauce has thickened to your desired consistency.

04

Step

While the sauce simmers, place the wide rice noodles in a large bowl and cover them completely with hot water. Allow the noodles to soak until they are softened, roughly 15 minutes. Once softened, drain the noodles thoroughly and rinse with cold water to prevent sticking.

05

Step

Divide the softened rice noodles among serving plates. Generously top each serving with the flavorful shrimp sauce. Garnish each plate with a sprinkle of fresh cilantro, a dollop of Greek-style yogurt, and chopped peanuts to add a delightful crunch.

Adjust the amount of red chile paste according to your spice preference. A little goes a long way!
For an extra layer of flavor, try adding a splash of lime juice to the sauce just before serving.
Feel free to substitute other types of noodles, such as spaghetti or linguine, if you prefer.
If you don't have Greek-style yogurt, sour cream can be used as a substitute.
Toasted sesame seeds also make a great garnish.

The spice level is just right for me, but I can see how some people might want to add more chile paste.
