For a richer flavor, lightly toast the saffron powder in a dry pan for a minute before adding it to the curry.
Adjust the amount of cayenne pepper to your preferred level of spiciness.
If fresh curry leaves are unavailable, you can use dried curry leaves, but be sure to crush them slightly to release their aroma.
This curry is also delicious served with roti or naan bread.
