Combine Ingredients: In a large bowl, gently mix together the quark cheese, sifted flour, sugar, plumped raisins, beaten eggs, baking soda, vanilla extract, and salt until just combined. Be careful not to overmix. (5 minutes)

Shape the Syrniki: Place the remaining 1/4 cup of flour in a shallow dish. Take approximately 2 tablespoons of the quark mixture and gently roll it into a ball. Then, flatten the ball into a patty about 2 inches in diameter, squaring off the edges for a more traditional look. Dredge the patty in the flour, ensuring it's lightly coated on all sides. (15 minutes)

Fry to Golden Perfection: Heat about 1 1/2 tablespoons of vegetable oil in a non-stick skillet over medium-low heat. Once the oil is hot, carefully place the syrniki in the skillet, being careful not to overcrowd the pan. Fry for 3 to 4 minutes per side, or until they are a deep golden brown and a firm shell has formed. (8-10 minutes per batch)

Drain and Serve: Transfer the fried syrniki to a plate lined with paper towels to drain any excess oil. Repeat with the remaining batter, adding more oil to the skillet as needed. Serve warm with your favorite toppings, such as jam, sour cream, honey, or fresh berries. (5 minutes)

For extra flavor, try adding a pinch of lemon or orange zest to the batter.
If the batter is too wet, add a little more flour, one tablespoon at a time, until it reaches a workable consistency.
Be sure to use low heat, and don't overcrowd the pan. Overcrowding or high heat will cause uneven browning, or that they will burn.
For a lighter version, you can bake the syrniki in a preheated oven at 350°F (175°C) for about 20-25 minutes, or until golden brown.
