Follow The Directions

01

Step

Prepare the instant mashed potatoes according to the package directions. Set aside. (5 minutes)

02

Step

Heat 1 tablespoon of vegetable oil in a skillet over medium heat. Add the diced onion and sauté until softened and translucent. (3-5 minutes)

03

Step

Add the cooked mashed potatoes to the skillet with the onions. Season generously with salt and pepper to taste. Mix well to combine. (2 minutes)

04

Step

Warm the corn tortillas. You can wrap them in a damp paper towel and microwave for 15-20 seconds to make them pliable.

05

Step

Spoon approximately 1/4 cup of the potato mixture into the center of each tortilla. Fold the tortilla in half to form a taco shape. Secure each taco with toothpicks to keep the filling inside. (10 minutes)

06

Step

Heat 1/2 cup of vegetable oil in a clean skillet over medium-high heat until shimmering. Carefully place the potato tacos in the hot oil, ensuring not to overcrowd the pan. (2 minutes)

07

Step

Fry the tacos until they are crispy and golden brown on both sides, about 1 minute per side. Use tongs to carefully flip the tacos. (2 minutes)

08

Step

Remove the fried tacos from the skillet and place them on a plate lined with paper towels to drain excess oil. (1 minute)

09

Step

Carefully remove the toothpicks from each taco before serving. Top with shredded lettuce, chopped tomatoes, shredded cheese, and your favorite salsa. Serve immediately and enjoy!

For extra flavor, add a pinch of garlic powder or cumin to the mashed potato mixture.
If you don't have toothpicks, you can use a small amount of mashed potato to 'glue' the taco shut before frying.
Feel free to customize the toppings! Consider adding sour cream, guacamole, or hot sauce.
These tacos are best served immediately while they are still hot and crispy.

Be careful not to overfill the tortillas, or they might tear during frying.
